Each October 3, the Dutch city of Leiden celebrates its deliverance from a Spanish siege in 1574, when relief finally came to its starving people. By tradition the city feasts on herring and white bread and steaming pea soup, with parades and a funfair, in a proud civic holiday that has marked the day for centuries.
