Each July, the town of Zator, at the heart of Poland's Carp Valley, celebrates its fish-farming heritage with the Carp Festival. Culinary and cultural events fill the market square, in a celebration of the carp ponds that have shaped this corner of Lesser Poland and the dish at the center of the Polish Christmas table.
