Bollokume (also called ballokume) is a thin, spiral-shaped cookie made with corn flour, sugar, eggs and butter, historically baked by women during the Spring Day festival in Elbasan. The Bollokume Festival was created to honor this age-old confection and to engage youth in learning the local recipe. It reflects Elbasan’s pride in this unique element of their cultural heritage and the continuation of domestic folk traditions.
