Koures is the traditional sheep-shearing ritual of Anogeia on Crete, marking the start of summer. During this communal event, shepherds invite friends and visitors to their mountain mitata (huts) to shear lambs and roast meat. The municipal website notes: “Koures (sheep shearing) is an ancient ritual during which the host and the rich hospitality he offers his guests play a central role. While sheep are being sheared, the ‘Ofto’ meat is slowly roasted on spits set up in a circle around the fire, while raki and wine flow freely and the feast begins!” 1. The celebration features live Cretan music, dance, and shared meals of lamb cooked antikristo style.
