Each February, the mountain town of Vinhais hosts the Feira do Fumeiro, a four-day fair celebrating the region’s renowned smoked sausages and cured meats 1. Known as the "Smokehouse Fair," it showcases the "capital do fumeiro" products: local chouriço, presunto, and other pork specialties smoked in traditional wood-fired ovens 1. Stalls and taverns brim with gastronomes sampling these rustic flavors, accompanied by live folk music. The fair also includes livestock displays, artisan craft booths, and even local bullfights, reflecting the rural heritage of Trás-os-Montes 1. Thousands of visitors come from across the North to enjoy authentic mountain cuisine and community festivities under the winter sun.
Vinhais has a long tradition of curing meats, dating back to when each farm processed its own pork for winter preservation.
