The Karcag Birkafőző Fesztivál is a traditional food festival in Karcag (Jász-Nagykun-Szolnok) celebrating the region’s famous mutton stew (birkapörkölt). Held each summer (around late June), hundreds of cooking teams compete over an open fire to make the tastiest birkapörkölt in hundreds of large cauldrons 1. The festival also features Hungarikum exhibitions, folk performances, and cultural programs, underlining Karcag’s status as a center of shepherding culture and cuisine.

Located in the Kunság region, Karcag has deep pastoral traditions. The birkafőző (sheep stew cooking) contest revives the old craft of mutton cooking that sustained herding families. Thousands gather for this locally cherished event that mirrors a country fair atmosphere. The festival fosters community pride, communal eating, and the heritage of horse breeding and gulyás life in the Great Plain.
