The municipal website notes: “Koures (sheep shearing) is an ancient ritual during which the host and the rich hospitality he offers his guests play a central role. While sheep are being sheared, the ‘Ofto’ meat is slowly roasted on spits set up in a circle around the fire, while raki and wine flow freely and the feast begins!” 1.
